Puff Pastry Apple Roses

These are an Internet sensation, so it’s not like I made this creative recipe myself…at all. I did test out using green apples vs. red apples, and of course, red apples are more impressive visually. Please, I beg you, do not use Red Delicious. You can use anything but. Try Roma, Gala, Braeburn, really anything red, just not Red Delicious – they do not have the right consistency for baking and turn to mush when heat is applied. Buy the puff pastry dough, don’t even bother making it, unless you have the time and the patience. It is a really labor-intensive, time-consuming dough to make and with my busy life, ain’t nobody got time for that.

I added a mix of sugar and cinnamon to this, but I would even go farther to recommend cardamom and nutmeg, two game-changers in my apple pie. If you have the time, soak the apples in some Cointreau and see what happens. Boozy apples are always my favorite. This recipe also used apricot preserves, which I omitted, but would definitely add next time, or substitute with cream cheese to give a little bit more balance to the pastry.
