Not Your Average Avocado Toast

I woke up this morning feeling like I really needed an epic breakfast, and in my book, that ALWAYS involves avocado and eggs. So instead of concocting something new, I found this recipe on the Honest Cooking Twitter page and couldn’t look away. It’s got zesty and citrusy avocado, fresh baby arugula, crisp radishes (cucumbers in my case, since I didn’t have radishes) all topped with a perfectly poached egg, sprinkled with cumin and chili powder, lemon juice and drizzled with EVOO.

Believe it or not, I’ve never poached eggs before, so I decided to take on the challenge, which proved…not challenging at all. Just watch the timing carefully.
